Meals for people who are lactose intolerant (can't eat dairy) 02 Jul 2006

    Hi Guys

Looking for recommendations for a menus for people like me who have recently found out that they are Lactose intolerant. Which absically means I can't digest milk sugar so any diary stuff is out.

    Current menu:

    Starters
    - Fine with prawn cocktail or tomato soup.
    Main
    - I'm currently left with burger/chicken and chips, tomato and pasta, so open to loads of suggestions.
    Dessert
-Especially interetsed in what deserts I can have as no chocolate (well milk chocolate and don't like dark), cheescake or ice cream.

Looking for loads of ideas as my meal time looking really hard to cater for, so any ideas would help.

    Full definition:
Lactose intolerance is the condition in which lactase, an enzyme needed for proper metabolization of lactose (a constituent of milk and other dairy products), is not produced in adulthood.

This is really tricky. However I found this recipe the other day, I wanted something that was a healthy fruit based desert but more interesting than a standard fruit salad.

I'm lactose intolerant too! Fun ain't it :-/

perhaps try your hand a soya milk or yoghurt ice-'cream'. Flavour the milk or yoghurt up with some fresh fruit or even lactose-free chocolate powder and wack it in the freezer. Alternatively there are flavoured soya-milks. Can take a while to make because you need to stir it now and again, but it's handy if, like me, you really miss ice-cream!

you can get many dairy free desserts. Look for Swedish glace a dairy free ice cream, definetly the best tasting of all non dairy desserts.

Try cous cous with roasted vegetables and chicken in one of nandos piri piri sauces as a main.

I think tomato soup has cream in it?

My lactose intollerant children love the Swedish Glace ice cream. I have only ever got chocolate and vanilla in Sainsburys and have to shop elsewhere to get raspberry (there are also mocha and caramel I think, but have never found these myself). They also live on Alpro soya yogurts and desserts - available in many flovours, but to get the full range, I have to go to a health food shop. JS do stock some flovours.

I am thrilled that JS now stock Swedish Soft (a dairy free soft cheese alternative) and again my children like this one. I do struggle to be completely dairy free as so many processed foods contain milk - even chicken or fish in breadcrumb can contain milk and prawn cocktail and bacon crisps - and twiglets - it's a mine-field!!!

My difficulty is that I do not know how to cook with soya substitutes like milk and cream. For example, I would love to make just one lasange or fish pie for both my "normal" children and the lactose free ones! Any ideas please?
