    Hi Guys,
    i wonder if anyone can help me? my husband is a particularly fussy eater, and i go through all kinds of hell trying to feed him. he's come on in leaps and bounds in the last few months- but mushrooms are a barrier i don't think we'll ever cross! Well, i'd love to try making a beef wellington, but my efforts will go to waste if i can't find a Stewart-friendly alternative to the duxelle.
    Has anyone tried anything that might help me?
    usually, i'd just experiment until i got it right, but the beef's a bit pricey for me to be doing that!
    any help much appreciated :)

    Hello,
    I've never made Beef Wellington, but have always wanted to try it, but like your husband, I can't stand mushrooms. The thought of them makes me feel a bit queasy!
    I've been trying to think of alternatives (again, too expensive to buy beef and experiment - I'm a student) and so far have only considered making a puree of some other vegetable like carrots or something, but thought the consistency might not be creamy enough. Perhaps some kind of chick pea puree? I don't know if it would taste right, but the texture would work.
    Or, there's just the simple thing of just have beef in pastry! Though that might be a bit dull.
    I would think that making a thick sauce of some kind - perhaps a white sauce with pepper or horseradish - might be effective. Just make sure it's more of a paste than a sauce.
    Sorry if that wasn't very helpful, I'm not a cookery student! I just mix and match whatever I can afford.

    My recipe mixes very finely chopped onions and mushrooms combined with a smooth pate, I don't think the recipe would deteriorate without the mushrooms however I chop them so finely, no one knows they are there!!!!!!
