    Doe's anyone know how to make one?

    It's my Mums birthday next week and she really likes coconut cake but I can seem to find any simple coconut cake recipes. Any suggestions?

    Hi Jacky, I asked the same question on the 2nd September, 2006 and didn't get any replies but quite a few people had viewed. I had looked through all my cookery books and all the sites on the internet but couldn't find anything. My friend gave me a recipe which I did but I was not impressed with the results. Another friend said why don't you just do an ordinary sponge cake recipe with the addition of coconut. Worth thinking about I guess.

    Thats what my nan does - she has her basic sponge recipe that she just adapts. Although if you are adding more dry ingredients take some of the other dry ingredients out otherwise the cake won't be moist enough. So if she's making chocolate cake she'll replace some of the flour with cocoa. I can't remember the quantities though - just have a play I guess.

    I am certainly going to have a go at concocting the cake and will let you know what has come out the best. Wish now I had kept all my mums old cookery books. Maybe if I wrote to Delia she would advise!!!

    Here is my Mum's recipe and it is gorgeous!

    I usually bake this in a 2lb loaf tin.

    4oz butter
    4oz caster sugar
    2 large eggs
    6oz self raising flour
    2oz desicated coconut
    Approx 2 tablespoons of milk

    Cream butter & sugar till soft and pale, beat eggs and add to mixture. Gradually fold in coconut, then flour. Add milk to give soft dropping consistency. Sprinkle top of cake with coconut and caster sugar and bake at Gas mark 3 for 1 to 1 and a quarter hours. ENJOY

    I used to make this coconut cake ages ago and it was really lovely - but I used half the mixture and baked it in a loaf tin for one person.

    Snow Queen Cake

    Whitworths IngredientsRequired Ingredients
    150g/5oz Margarine
    150g/5oz Caster Sugar
    3 Eggs
    225g/8oz Self Raising Flour
    Pinch of Salt
    125g/4oz Whitworths Desiccated Coconut
    45ml/3tbsp Milk


    Icing
    175g/6oz Icing Sugar
    50g/2oz Butter
    Top of the milk
    50g/2oz Whitworths Desiccated Coconut


    How to make
    Oven: 180°C, 350°F, Gas Mark 4
    1. Grease and flour an 18cm, 7" cake tin.
    2. Cream margarine and sugar until light.
    3. Beat in the eggs, one at a time.
    4. Sift flour and salt. Mix with coconut.
    5. Add dry ingredients and milk.
    6. Turn into prepared tin and bake for 1-1¼ hours.
    7. Place on a wire rack until cool.
    8. Icing - Cream together icing sugar and butter. Add a little top of the milk to give a smooth consistency.
    9. Cover cake with butter cream and coat in coconut.
