    A full gutted seabass stuffed with fresh rosemary, wrapped in foil.. gorgeous AND healthy.. happys days!!

    Chicken legs and thighs marinated in coca cola, chilli and garlic. Mmm!

    Sausages, when nearly done, brushed with honey.

    Beef kebabs marinated in tumeric, cumin, tomato paste, lemon, olive oil and chilli

    Ribs! Mmmm ribs.

    I'm a chef and food writer and a big fan of Barbecue cooking, and love any opportunity to encourage people to broaden their Barbecue skills.

    If your one of the 46% who doesn’t like BBQ's please read this.....

    Don't think of burnt sausages or half cooked chicken think more in terms of reliving wonderful Mediterranean memories…. Sleepy fishing habours with azure blue waters lapping the quay. Dining al fresco with delicious fresh seafood cooking on the grill.

    You don’t need to be a Master Chef to recreate these dishes just learn a few basics.

    Learn to control the heat…after all you wouldn’t cook in your kitchen with the burners only on high would you? Even with charcoal….you can control the heat.

    There are two different methods of cooking on a BBQ….one is called the direct method and the other the indirect. When using the indirect method you can actually roast, bake or even steam food…once you know how.

    Don’t forget the Vegetarians….these days if you have a party for more than 10 people chances are 1-2 of your guests will be non meat eaters.

    Weatherproof your Barbie!!!!
    I like to cook a pot of Chili or Curry the day before as a guarantee against bad weather.
    If the weather does turn bad you can invite them in and you don’t have to stand outside grilling in the rain. And if the weather remains fine it ensures you don’t run out of food!
    Remember a BBQ is considered a pretty casual affair and thus often extra guests can arrive or no matter how large your grill is there are always periods when your guests are waiting for the food.

    Great on the barbie, even good for veggies: put a cob of sweet corn, a knob of butter and paint the corn in honey and sprinkle paprika, wrap in tin foil and put on the barbie until corn is soft, turning regularly to coat in the butter inside....mmmm, i'm hungry!
