Ice ice baby

Rescue the kids from summer meltdown with these deliciously cool and fruity treats - just perfect for parties.

 

Frozen chocolate bananas
Cut the banana into halves – or thick slices if preferred – and don’t dip them in too much chocolate. You could always try using a pot of fruity yogurt instead.
MAKES 8
PREP TIME: 10 MINUTES
OVERNIGHT FREEZING
100g milk or dark chocolate, broken into squares
4 Sainsbury’s bananas, peeled and cut in half widthways
Sprinkles: you can use hundreds and thousands for young children, or finely chopped crystallised ginger for older children

  • Melt the milk or dark chocolate in a bowl placed over simmering water (or, alternatively, you can melt it in the microwave).
  • Skewer the banana halves with lolly sticks. Dip the ends of the bananas into the melted chocolate and then dip them into the hundreds and thousands on a plate, or ginger, or dried fruit, chopped.
  • Place them on a baking tray to allow the chocolate to set. You can either serve the chocolate bananas straight away or freeze them for a day or two until you are ready to serve them.

Berry and yogurt lollies
MAKES 4
PREP TIME: 5 MINUTES + FREEZING
1 x pack 225g Sainsbury’s blueberries (fresh or frozen)
100g Sainsbury’s raspberries (fresh or frozen)
125g Sainsbury’s Greek-style yogurt
1 tsp vanilla extract (optional)

  • Whizz the fruit in a food processor until smooth, then sieve to remove skin and seeds. Mix in the yogurt and vanilla extract (if using). Pour into 4 ice-lolly moulds.
  • Pop in the freezer overnight until solid. Remove from freezer and wait 5 minutes before taking the lollies out of the moulds.

Melon ice-cream smiles
Halve and deseed 1 galia melon. Scoop the flesh into a food processor and put the 2 melon skins into bowls, cut-side up. Blend the flesh until smooth, whizz in 250g vanilla ice cream and pour back into the melon skins. Place in the freezer for 4 hours or overnight. Remove and allow to stand for 5-8 minutes, then cut into thin slices. Serve.

 

 

Top tip
These cool treats are the perfect way to introduce kids to new flavours, as well as getting them to eat more fruit. Involving them in the preparation will inspire even greater enthusiasm, so let them help out with the mixing, pouring, dipping and freezing – just be prepared for a little mess! With the frozen chocolate bananas, make them ‘chief decorators’ with control over the sprinkles, so that they can decorate to their own personal taste.
