3 ways with Jersey Royals

These wonderful potatoes have a delicate papery skin, creamy texture and sweet, earthy taste.  They hold a Protected Designation of Origin status – an accolade awarded by the EU in much the same way that France was granted sole use of the word ‘champagne’.

Smoked salmon & asparagus niçoise

A very special salad using seasonal flavours.

Ingredients

2 x 500g packs Taste the difference baby Jersey Royals
1 x 250g pack asparagus, halved, woody ends removed
200g green beans, topped and tailed
100g Sainsbury’s pitted black olives
half a red onion, finely sliced
200g Sainsbury's Taste the difference Isle of Skye smoked salmon, sliced into ribbons
4 hard-boiled free-range eggs, quartered

For the dressing:
2 heaped tablespoons dill, finely chopped
2 tablespoons Sainsbury’s extra-virgin olive oil
1 tablespoon white wine vinegar
half teaspoon caster sugar


Method


1.  Place the potatoes in a large pan of cold water and bring to the boil.  Simmer for 15–20 minutes, until tender, then drain and allow to cool.

2.  Meanwhile, blanch the asparagus and beans for 3 minutes in a pan of boiling water.  Drain and place in a bowl of cold water for 10 minutes to set the colour, then drain.

3.  Mix together the dressing ingredients. Toss the potatoes with the asparagus, beans, olives, onion and dressing.  Serve topped with salmon and egg and season with salt and freshly ground black pepper. 

 

 

Warm Jersey Royal & chorizo salad     

Warm Jersey Royal & chorizo salad
Serves: 6

Dry-fry 200g chopped chorizo until cooked through with crispy edges, then drain on kitchen paper.  Toss in a bowl with 2 x 500g packs warm boiled Taste the difference baby Jersey Royals and a dressing made by mixing 1 tablespoon grainy mustard with 3 tablespoons Sainsbury’s extra-virgin olive oil and a pinch of sugar.  Serve scattered with 1 bunch of spring onions, sliced, and watercress.

       
Mediterranean pesto Jersey Royals  

Mediterranean pesto Jersey Royals

In a food processor, whizz together 50g Sainsbury’s pitted green olives, 6 sun-dried tomatoes and a clove of garlic, then stir in half a red onion, finely chopped, and 2 tablespoons Sainsbury’s extra-virgin olive oil.  Stir through 2 x 500g packs hot, boiled Taste the difference baby Jersey Royals and season with freshly ground black pepper.  Great served with a rack of lamb.
