Mediterranean minted lamb chops

A delicious way to barbecue lamb chops with a hint of the Mediterranean.
4 minted lamb leg chops or chump chops
1 whole cucumber, cubed
125g cherry tomatoes, halved
125g black olives, pitted & halved
1 tablespoon freshly chopped mint
For the dressing:
75ml olive oil
juice of 1 lemon
freshly ground black pepper
To serve:
4 pitta breads, warmed
