    I really don't know - mine always disintegrate in the water when I cook them

    Hi BatFreak,

    My partner swears by a touch of vinegar in the pan of hot boiling water. He puts about a tablespoon in and then quickly turns it over in the pan.

    It works but unsurprisingly... it tastes slightly vinegary!

    Vinegar will help but you need to have the water hot - just simmering and if you stir the water vigorously so you get a little vortex in the centre of the pan, drop the egg in and the swirling motion will help keep the egg together.

    I have still to try this method. I have tried these small dished poachers that hang on the edge of a saucepan. They take forever & the egg ends up overcooked on the outside (tough texture). For years I have floated a non-stick fairy cake dish in simmering water. A light smear of butter over the surface before placing the egg inside.

    For a treat sometimes I will put freshly cooked pieces of mushoom (fried with a garlic puree rub) into the egg just prior to poaching.

    I find lightly simmering water, a splash of white wine vinegar (it tastes less vinegary than malt) and a vortex of swirling wtaer do the trick in a large pan with about 6 inches of water. I often find it helps to have the egg already cracked into a small bowl so you can hold it as your are spinning the water and get the egg into the water quicker.
    And only do one egg at a time.
