Creamy mango rice pudding

You will need
- 1 vanilla pod
- 700ml whole milk
- 100g Sainsbury's pudding rice
- 25g light brown sugar
- 300g frozen mango chunks by Sainsbury's, defrosted
- 2 teaspoons honey or maple syrup, to serve (honey is only suitable for babies over 1 year old)

Step by step guide to making Creamy mango rice pudding
- Split the vanilla pod in half lengthways and scrape out the seeds with a sharp knife.
- Add the seeds and pod to a small saucepan along with the milk, pudding rice and the light brown sugar.
- Bring the pan to a gentle boil. Turn down the heat and simmer for 20 minutes, stirring regularly until the rice is cooked and the pudding is thick and creamy.
- Remove the vanilla pod from the pan. Add the mango chunks and cook for a further 5 minutes.
- Serve drizzled with honey or maple syrup. (Honey is only suitable for babies over 1 year old).
For toddlers: Blend the mango and then fold the fruit through the rice. Wizz mixture further for younger babies, if they have not yet been introduced to lumps.
