You will need
- 1 whole cauliflower, cut into florets
- 25g butter
- 2 tablespoons plain flour
- 300ml whole milk
- 125g mature West Country Farmhouse Cheddar, grated
- 3 tablespoons white breadcrumbs
- Fresh parsley, chopped, to serve (optional)

Step by step guide to making Classic cauliflower cheese
- Preheat the oven to 220°C, fan 200°C, gas mark 7. Boil the cauliflower florets until just tender, then drain and place in an ovenproof dish.
- Melt the butter in a small saucepan, then stir in the plain flour and cook for 2 minutes.
- Gradually mix in the whole milk to make a smooth sauce, then stir in 75g of the grated cheese.
- Pour the cheese sauce over the cauliflower in the dish, then top with the breadcrumbs and remaining 50g of cheese.
- Place in the oven and bake for 30 minutes until golden and bubbling. Scatter with a little chopped parsely to serve, if liked.
