You will need

  • 1 whole cauliflower, cut into florets
  • 25g butter
  • 2 tablespoons plain flour
  • 300ml whole milk
  • 125g mature West Country Farmhouse Cheddar, grated
  • 3 tablespoons white breadcrumbs
  • Fresh parsley, chopped, to serve (optional)

Step by step guide to making Classic cauliflower cheese

  1. Preheat the oven to 220°C, fan 200°C, gas mark 7. Boil the cauliflower florets until just tender, then drain and place in an ovenproof dish.
  2. Melt the butter in a small saucepan, then stir in the plain flour and cook for 2 minutes.
  3. Gradually mix in the whole milk to make a smooth sauce, then stir in 75g of the grated cheese.
  4. Pour the cheese sauce over the cauliflower in the dish, then top with the breadcrumbs and remaining 50g of cheese.
  5. Place in the oven and bake for 30 minutes until golden and bubbling. Scatter with a little chopped parsely to serve, if liked.
