Eyeball potatoes
These potatoes are great for Halloween parties, with olives for the bloodshot eyes.

You will need
- 12 baby new potatoes (about 250g)
- 1 tablespoon olive oil by Sainsbury's
- 75g be good to yourself soft cheese
- 6 Sainsbury's pimento stuffed olives, halved

Step by step guide to making Eyeball potatoes
- Preheat the oven to 200°C, fan 180°C, gas mark 6.
- Put the potatoes in a roasting tin and toss with the oil and some salt and pepper. Roast for 20-25 minutes, until crispy on the outside and soft on the inside.
- Let cool for 10 minutes, then use a teaspoon to scoop a little flesh from the top of each potato.
- Spoon a little soft cheese into the holes, then top with a pimento olive half. Serve warm.
