You will need
- 2 avocados, diced into 1cm cubes (keep skin for serving)
- 2 mangos, diced into 1cm cubes
- 200g red and white grapes, halved
- 16 king prawns, shelled
- 1 sweet chilli, finely chopped
- 1 bunch of fresh coriander, finely chopped
- 4 tablespoons orange juice
- 2-3 tablespoons extra virgin olive oil
- Pinch of salt

Step by step guide to making King prawn salad
- Mix the avocado, mango and grapes in a bowl.
- Gently pan fry the prawns in olive oil for 5 minutes and glaze with orange juice.
- To serve, fill each avocado skin with 3 prawns and a large spoonful of avocado, mango and grape mixture, then season with olive oil, salt, chilli and coriander.
