You will need
- 8 traditional regional lamb loin chops
- 1 tablespoon olive oil
- 28g pack fresh mint, finely chopped, reserving a few leaves to garnish
- 1 tablespoon caster sugar
- 4 tablespoons red wine vinegar
- 200g Taste the Difference Greek barrel-aged feta, crumbled

Step by step guide to making Lamb chops with fresh mint sauce and feta
- Heat the barbecue until the coals are grey, or heat a gas barbecue to medium. Season the chops and brush with the oil.
- Grill the lamb for 6-8 minutes on each side or until cooked to your liking.
- Meanwhile, make the mint sauce; mix together the mint, sugar, vinegar, a good pinch of salt and 2 tablespoons boiling water.
- Serve the chops topped with the crumbled feta and dollops of the mint sauce, garnished with extra mint leaves.
Cook's tip: This lamb dish is great served with baby potatoes for a more filling meal.
