Marinated mushroom kebabs
A simple balsamic and garlic marinade adds great flavour to these chicken and mushroom skewers.

You will need
- 75ml olive oil
- 45ml balsamic vinegar
- 3 garlic cloves, peeled and finely chopped
- 2 tablespoons fresh parsley, chopped (optional)
- Salt and freshly ground black pepper, to taste
- 450g closed cup mushrooms, trimmed and wiped
- 500g chicken breasts, diced
- 3 mixed peppers, cut into large cubes

Step by step guide to making Marinated mushroom kebabs
- Mix the olive oil, balsamic vinegar, garlic, parsley (if using) and seasoning together in a large bowl.
- Add the mushrooms, chicken and peppers and stir until the meat and veg are well coated. Cover the bowl and leave to marinate for at least 30 minues, stirring occasionally.
- Preheat the barbecue or grill.
- Thread onto 8 skewers, alternating the mushrooms, chickens and peppers. Cook on a sheet of foil on a medium-hot barbecue (or under the grill) for about 6-7 minutes on each side.
