Plum, oat and coconut crumble

Crumble is so simple to prepare and the coconut gives the oats a natural sweetness.

You will need

  • 400g Sainsbury's punnet plums, rinsed, halved and stoned
  • 1 large dessert apple, peeled, cored and chopped
  • 1 tablespoon maple syrup
  • 1 teaspoon Sainsbury's Taste the Difference Madagascan vanilla extract
  • 75g jumbo porridge oats
  • 30g Sainsbury's desiccated coconut
  • 15g unsalted butter, melted
  • 25g light muscovado sugar

Step by step guide to making Plum, oat and coconut crumble

  1. Preheat the oven to 180°C, fan 160°C, gas 4. Place the plums and apples in a 1 litre ovenproof dish and toss with the maple syrup and vanilla extract.
  2. Make the crumble by placing the oats and coconut in a bowl, add the butter and sugar and mix everything together well.
  3. Sprinkle the crumble over the fruit and cover with foil.
  4. Bake for 15 minutes then remove the foil and bake for a further 10 minutes until cooked and golden and the fruit is softened and the topping crunchy. Serve warm with vanilla or natural yoghurt.

For baby: Place a little of the cooked fruit in a blender with a little boiled water and blitz to make a pureé. Stir through a little thick natural yogurt to serve.
