You will need
- 4x 250g pork chops
- Sea salt, to season pork
- Freshly ground black pepper, to season pork
- A lug of olive oil
- 2 eating apples, sliced into 8 segments
- 1 knob of butter
- 4x potatoes, peeled and diced

Step by step guide to making Pork chops, caramelised apple wedges and potatoes
- Preheat the oven to 200°C/400°F/gas mark 6.
- Lay the chops on a board and make 2cm deep cuts along the fatty side of them.
- Sprinkle with salt and pepper.
- Peel and dice 4 potatoes and lace with olive oil before placing in the oven for 45 minutes or until browned and crisp.
- Add a lug of olive oil to a hot pan, and then add the chops to the pan or griddle and cook for 8 to 10 minutes (depending on their thickness), turning every minute or two, until coloured on both sides.
- Add apples and a knob of butter to the fan and fry until lightly golden.
- Plate the chops and serve with the apple wedges on top and potatoes on the side, with a drizzle of olive oil.
