You will need

  • 500g beef mince
  • 1 onion, peeled and finely chopped
  • 1 teaspoon curry powder
  • 2 slices bread, whizzed in a blender to make fine breadcrumbs
  • 400g carrots, peeled and chopped into discs
  • 2 x 110g packs Moroccan-style savoury cous cous
  • 150g unsalted mixed nuts and raisins

Step by step guide to making Beef koftas with fruity cous cous

  1. Place the beef mince, onion, curry powder and breadcrumbs in a bowl, then mix together.
  2. Separate the mixture into 8 portions and mould each portion around the end of a metal or wooden skewer (if you are using wooden skewers, soak them in water for 20 minutes before using). Chill for 30 minutes to allow the meat to firm.
  3. When the koftas have chilled and are ready to cook, preheat the grill and put a saucepan of water onto boil. Boil the carrots for for 8-10 minutes until tender, then drain.
  4. While the carrots cook, grill the koftas for 8-10 minutes, turning occasionally, until no pink remains and they are piping hot.
  5. Prepare the cous cous, following pack instructions, and stir through the carrots. Add the mixed nuts and raisins and combine. Serve on the side with the koftas.

Cook's tip: If you prefer it a bit spicier, try using hot curry powder or adding a finely chopped red chilli to the bowl with the beef mince.
