You will need

  • 1 tablespoon olive oil
  • 4 sheets filo pastry, each one halved
  • 75g half fat crème fraîche
  • 125ml semi skimmed milk
  • 15g basics Italian hard cheese, grated
  • 3 medium Brtish free range Woodland eggs
  • ½ x 15g pack fresh thyme, leaves washed and picked
  • 125g pack Abergavenny goats' cheese, crumbled
  • 140g pack fresh figs, halved
  • 200g bag mixed leaf salad, to serve

Step by step guide to making Fig, thyme and goats' cheese tart

  1. Preheat the oven to 180ºC, fan 160°C, gas mark 4. Brush an 18cm round loose-bottomed cake tin with a little of the oil, then line with 1 sheet of the filo pastry.
  2. Layer the remaining sheets of pastry, laying the sheets on top of each other, brushing with oil between each layer.
  3. Put the crème fraîche, milk, grated hard cheese, eggs and most of the thyme in a bowl and mix together.
  4. Stir in the crumbled goats' cheese, season with black pepper, then pour the mixture into the tart.
  5. Arrange the halved figs, cut-side up, over the top and scatter over the remaining thyme. Bake in the oven for 45 minutes, until golden and set.
  6. Let the tart cool slightly, then slice and serve with the salad.

Cook's tip: If you're not a fan of goats' cheese, try using tangy, crumbly white Cheshire cheese in its place - it works just as well.
