Spinach and Sunblush tomato crown

Filo pastry gives this tangy tomato tart a crispy crown, great with a simple salad.

You will need

  • ½ tablespoon olive oil by Sainsbury's
  • 1 bunch spring onions, trimmed and chopped
  • 1 garlic clove, peeled and finely chopped
  • 60g frozen British garden peas by Sainsbury's
  • 2 large British free range Woodland eggs by Sainsbury's, beaten
  • 100g British half fat crème fraîche by Sainsbury's
  • 100g be good to yourself Greek-style cheese, crumbled
  • 30g Sainsbury's pine nuts, toasted
  • 100g Taste the Difference Sunblush® tomatoes, sliced in half
  • 200g young leaf spinach
  • 40g unsalted English butter by Sainsbury's, melted
  • 4 sheets filo pastry

Step by step guide to making Spinach and Sunblush tomato crown

  1. Preheat the oven to 180ºC, fan 160ºC, gas mark 4. Heat the oil in a frying pan and cook the spring onions for 3 minutes. Add the garlic and peas and cook for a further 2 minutes.
  2. Tip into a bowl and mix in the beaten eggs, crème fraîche, Greek-style cheese, pine nuts and Sunblush® tomatoes. Season with black pepper.
  3. Place the spinach in a colander and pour over a kettleful of boiling water. Let cool slightly before squeezing out the excess water. Roughly chop, then add to the egg mixture and mix well.
  4. Brush a 23cm springform tin with a little of the melted butter. Line with layers of the filo sheets, brushing each sheet with melted butter as you go. Arrange so the triangular edges of the sheets point up and out of the tin, creating a crown effect.
  5. Pour the egg mixture into the filo case and bake for 30 minutes, until the filling is set. Carefully remove from the tin and serve warm to make the most of the crispy pastry.
