Rice, mushroom and egg pastry roll

This puff pastry roll is inspired by traditional Russian 'kulebiaka' with its tasty rice filling.

You will need

  • 1 tablespoon olive oil
  • 250g pack large flat mushrooms, chopped
  • 250g chestnut mushrooms, chopped
  • 3 garlic cloves, peeled and finely chopped
  • 200g pack young leaf spinach
  • 5 medium British free range Woodland eggs, 4 left whole and 1 beaten
  • 250g pack microwaveable long grain rice
  • ¾ x 25g pack fresh dill, chopped
  • 1 tablespoon flour, for dusting
  • 375g pack ready-rolled lighter puff pastry
  • 100g bag Italian style salad, to serve

Step by step guide to making Rice, mushroom and egg pastry roll

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Heat the oil in a large pan, add the mushrooms and cook for 5-8 minutes.
  2. Stir in the garlic and spinach, and cook for a further 2 minutes. Drain off any excess liquid.
  3. Meanwhile, bring a pan of water to the boil and add the 4 whole eggs. Boil for 7 minutes, then drain and cool under running water. Peel.
  4. Put the rice in a bowl. Season with freshly ground black pepper then stir in the dill.
  5. Dust your work surface with the flour and roll out the pastry to a square.
  6. Spoon the mushroom mixture down the middle, put the boiled eggs on top, then spoon over the rice.
  7. Brush the pastry around the filling with the beaten egg, then fold the long sides up and over the filling.
  8. Flip the roll over, trim the edges and crimp together with the back of a fork. Use any trimmings to decorate the roll as you wish.
  9. Put on a baking tray, brush with the remaining egg and bake for 30 minutes until golden.
  10. Slice the roll and serve warm with the Italian salad.

Cook's tip: This is great served with a spoonful or two of watercress sauce by Sainsbury's.
