You will need

  • 1 tablespoon olive oil
  • 400g pack be good to yourself beef stir-fry
  • 1 onion, peeled and sliced
  • 1 red and 1 yellow pepper, each deseeded and sliced
  • ¼ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon chilli powder
  • 2 garlic cloves, peeled and finely chopped
  • 8 plain soft flour tortillas
  • 1 ripe avocado, stoned, peeled and chopped
  • 200g jar vine ripened tomato & chipotle salsa
  • 4 tablespoons soured cream

Step by step guide to making Speedy beef fajitas

  1. Heat half the oil in a frying pan over a high heat. Brown the beef in 2 batches (2-3 minutes each). Then transfer to a plate and cover with foil.
  2. Heat the remaining oil and cook the onion and peppers over a medium heat for 5 minutes, until softened slightly. Stir in the spices and garlic and cook for a minute. Add the beef and toss together.
  3. Meanwhile, warm the tortillas according to pack instructions. Mix the avocado with the tomato salsa.
  4. Spoon some beef mixture onto each tortilla, top with a spoonful each of salsa and soured cream. Roll up, or just fold in half, to eat.
