Vegetable croquettes

Mixed veg rolls coated in crispy breadcrumbs that make a great snack, starter or side.

You will need

  • 2 tablespoon olive oil by Sainsbury's
  • 1 onion, peeled and finely chopped
  • 140g leek, trimmed and finely chopped
  • 200g aubergine, trimmed and finely chopped
  • 100g carrot, peeled and grated
  • ½ x 28g pack fresh flat leaf parsley, finely chopped, plus extra to garnish
  • 80g British Cheddar by Sainsbury's, grated
  • 240g fresh breadcrumbs
  • 1 tablespoon plain flour
  • 1 large British free range Woodland egg by Sainsbury's, lightly beaten
  • 80g bag Sainsbury's cosmopolitan salad
  • ½ x 230g pot tzatziki by Sainsbury's

Step by step guide to making Vegetable croquettes

  1. Heat 1 tablespoon of the oil in a large frying pan, and fry the onion and leek for 5 minutes. Stir in the aubergine and carrot and cook for a further 10 minutes.
  2. Remove from the heat, tip into a bowl and mix with the parsley, Cheddar and 175g of the breadcrumbs until combined.
  3. Put the flour on a plate, the egg in a bowl and the remaining breadcrumbs on another plate. Using your hands, mould the veg mixture into 12 small logs.
  4. Roll each log first in the flour, then dip in the beaten egg and finally roll in the breadcrumbs to coat.
  5. Heat the remaining oil in a frying pan and fry the croquettes for 5 minutes, turning, until crisp and golden. You may need to do this in batches.
  6. Garnish with the parsley, and serve with salad and tzatziki on the side.
