These speedy Greek-style wraps mix leftover roast lamb with fresh salad and cool tzatziki.

You will need
- 1 tablespoon olive oil
- 1 red onion, peeled and finely sliced
- 1 garlic clove, peeled and finely chopped
- 300g leftover cooked roast lamb, shredded
- 2 teaspoons dried mixed herbs
- 4 be good to yourself tortilla wraps
- 335g large salad bowl
- 230g pot tzatziki

Step by step guide to making Lamb souvlaki
- Heat the oil in a large frying pan, and sauté the onion and garlic for 5 minutes until soft. Add the lamb and half of the dried herbs, and stir-fry for 2 minutes, until warmed through.
- Meanwhile, lay the tortillas out onto plates. Divide the salad between the wraps, chopping the tomatoes and cucumber into smaller pieces as you go, and top with the lamb mixture.
- Sprinkle the remaining dried herbs over the tzatziki and serve on the side.
