Little Ones all-in-one baked sausages with lentils

This easy oven bake is a great all-round family meal - sausages, colourful veg and hearty lentils.

You will need

  • 454g pack Butcher's Choice pork sausages with 50% less fat
  • 1 tablespoon olive oil
  • 2 celery sticks, cut into 2.5cm chunks
  • 4 carrots, peeled and halved lengthways and cut into small chunks
  • 1 red onion, peeled and cut into wedges
  • 1 red pepper, deseeded and sliced
  • 2 garlic cloves, peeled and sliced
  • 500ml hot reduced salt beef stock
  • 1 teaspoon Dijon mustard
  • 410g tin green lentils in water, drained and rinsed

Step by step guide to making Little Ones all-in-one baked sausages with lentils

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the sausages in an ovenproof baking dish.
  2. Add the oil and turn the sausages to coat. Bake for 10 minutes before adding all the vegetables and garlic, and stirring together with some black pepper. Return to the oven to cook for 30 minutes.
  3. Mix the hot stock with the mustard and pour over the sausages and vegetables along with the lentils, then stir everything together.
  4. Cover carefully with foil and cook for a further 20-25 minutes, taking the foil off for the final 10 minutes.

Cook's tip: Don't be scared by the mustard - it just adds some extra flavour to the gravy without being too strong.
