You will need

  • 1.25kg potatoes, peeled and chopped into even chunks
  • 1 tablespoon olive oil
  • 1 onion, peeled and sliced
  • 1 garlic clove, peeled and finely sliced
  • 10 frozen thick pork sausages, thawed
  • 2 x 400g cartons basics chopped tomatoes
  • 410g tin cannellini beans in water, drained and rinsed
  • 400g tin basics kidney beans, drained and rinsed
  • 50ml 1% fat milk
  • 50g sunflower spread

Step by step guide to making Sausage, tomato and cannellini pot with mash

  1. Place the potato pieces in a pan of cold water and bring to the boil. Cook for about 15 minutes, until tender.
  2. Meanwhile, heat the oil in a frying pan and cook the onion over a medium heat for 5-10 minutes, until soft, adding the garlic for the last minute.
  3. Remove the skin from the sausages and shape the meat into 20 balls. Add to the onion in the pan. Cook for about 5-10 minutes, until the balls are golden brown and piping hot with no pink colour remaining.
  4. Stir in the tomatoes and beans, and cook for 5 minutes.
  5. Drain the potatoes well and mash with the milk and sunflower spread.
  6. Serve the mash with the sausage, tomatoes and beans.
