Sausage and potato bake

A warming supper of potatoes and carrots topped with juicy sausages, served with peas.

You will need

  • 1 tablespoon olive oil
  • 1 onion, peeled and sliced
  • 3 baking potatoes, peeled and cut into 2cm cubes
  • 400g carrots, peeled and cut into 2cm cubes
  • 2 garlic cloves, peeled and chopped
  • 1 chicken stock cube, made up to 400ml with hot water
  • 400g tin basics chopped tomatoes
  • 8 pack thick pork sausages
  • 300g British garden peas

Step by step guide to making Sausage and potato bake

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6.
  2. Heat the oil in a large pan and cook the onion for 5 minutes until soft. Stir through the potatoes and carrots and cook for a further 5-10 minutes, stirring occasionally, until starting to brown.
  3. Add the garlic, stock and tomatoes, and bring to a simmer. Cook for 10 minutes until the vegetables start to soften, then pour into a baking dish. Top with the sausages and bake in the oven for 30 minutes.
  4. Just before the sausage bake comes out of the oven, cook the peas in a pan of boiling water for 2-3 minutes. Drain and serve with the potato bake.

Make it veggie: Swap the chicken stock cube for a vegetable one and use Quorn sausages instead of pork.
