You will need

  • 1 tablespoon olive oil
  • 454g pack large pork sausages
  • 750g casserole selection, peeled and chopped
  • 250g stew mixture
  • 1 chicken stock cube, made up to 1 litre with boiling water

Step by step guide to making Sausage hotpot

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4.
  2. In a large, flameproof casserole dish, heat the olive oil and fry the sausages, until browned.  Remove the sausages from the dish and set aside.
  3. Add the onion from the casserole selection to the dish and fry until soft, then add the remaining chopped vegetables from the casserole selection to the dish.
  4. Stir well and add the stew mixture and the chicken stock. Season well and cook over a high heat for 5 minutes.
  5. Return the sausages to the casserole dish, transfer to the oven and cook for 1 hour, then serve.

Make it veggie: Try swapping the sausages for 250g Quorn sausages and replace the chicken stock cube with a vegetable cube.
