You will need
- 1 tablespoon olive oil
- 454g pack large pork sausages
- 750g casserole selection, peeled and chopped
- 250g stew mixture
- 1 chicken stock cube, made up to 1 litre with boiling water

Step by step guide to making Sausage hotpot
- Preheat the oven to 180°C, fan 160°C, gas mark 4.
- In a large, flameproof casserole dish, heat the olive oil and fry the sausages, until browned. Remove the sausages from the dish and set aside.
- Add the onion from the casserole selection to the dish and fry until soft, then add the remaining chopped vegetables from the casserole selection to the dish.
- Stir well and add the stew mixture and the chicken stock. Season well and cook over a high heat for 5 minutes.
- Return the sausages to the casserole dish, transfer to the oven and cook for 1 hour, then serve.
Make it veggie: Try swapping the sausages for 250g Quorn sausages and replace the chicken stock cube with a vegetable cube.
