Five ingredient Christmas cake

Most Christmas cake recipes call for lots of ingredients. Not this one, but it tastes just as good!

  • 200g unsalted English butter, softened, plus extra for greasing
  • 200g Fairtrade dark brown soft sugar
  • 4 medium British free range Woodland eggs, lightly beaten
  • 225g British plain flour
  • 1kg pre-soaked mixed fruit

Step by step guide to making Five ingredient Christmas cake

  1. Preheat the oven to 150°C, fan 130°C, gas mark 2. Grease a 19cm round cake tin and line the bottom and sides with baking parchment.
  2. Put the butter and sugar in a large mixing bowl. Cream together using a hand-held electric whisk.
  3. Gradually whisk in the eggs, then fold in the flour and the mixed fruit. Spoon the mixture into the tin and smooth the top.
  4. Bake for about 3 hours 45 minutes to 4 hours (cover with greaseproof paper if it's getting too brown) or until a skewer inserted into the middle of the cake comes out clean.
  5. Cool in the tin for 15 minutes. Turn out onto a wire rack to cool. Decorate as you wish when cold (see Cook's tip for the candy cane suggestion shown above).
  6. To store, wrap in a double layer of baking parchment and a layer of foil and store in an airtight tin. The un-iced cake will keep for up to 6 weeks (pierce with a skewer and 'feed' with brandy every week, if you like). Once iced, the cake will keep for a further 3 months.

Cook's tip: Brush all over with warmed apricot jam. Roll out a 454g pack white marzipan to 30cm in diameter and use to cover the cake. Brush the marzipan with a little brandy, then roll out a 500g pack soft white icing to cover the cake. Trim around the base. Cut out slim triangles from the trimmings and position in a circle in the middle of the cake, as though the icing has been peeled back. Use a little water to stick in place. Tie 5 candy canes together with ribbon and sit in the middle of the cake. Tie a matching ribbon around the cake to finish.
