  • 150g salted butter, cut into cubes, plus extra for greasing
  • 75g demerara sugar
  • 120g golden syrup
  • 300g Scottish porridge oats
  • 50g apple, peeled and cut into chunks
  • 100g blackberries

Step by step guide to making Apple and blackberry flapjacks

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4. Grease and line a 20cm square tin with baking paper.
  2. Place the cubed butter, demerara sugar and golden syrup into a large saucepan and melt over a low heat, until smooth.
  3. Stir the porridge oats and chopped apple into the melted mixture until combined.
  4. Scoop the apple flapjack mixture into the lined tin and spread out to cover the base completely, making sure the mixture is pushed down firmly.
  5. Scatter the blackberries over the top and push gently into the mixture.
  6. Bake in the preheated oven for 25 minutes until golden brown on top.
  7. Remove from the oven and score into squares while still warm, then leave to cool completely in the tin (this will take about an hour).

Cook's tip: You could swap the blackberries for other red fruits depending on what is in season.
