As a change from brownies try blondies, packed with white chocolate, coconut and Macadamias.

You will need

  • 125g unsalted butter, softened
  • 400g Fairtrade light brown soft sugar
  • 2 eggs
  • 2 tablespoons vanilla extract
  • 125g plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 80g macadamia nuts, roughly chopped
  • 50g dessicated coconut
  • 100g white chocolate, roughly chopped

Step by step guide to making Macadamia nut blondies

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4. Line a 36 x 24cm baking tin with baking paper.
  2. Whisk the butter and sugar (using an electric whisk) together until combined. Add the eggs, whisking in one at a time, and the vanilla extract.
  3. Add the flour, baking powder and salt and mix to combine. Gently stir in the nuts, coconut and chocolate chunks until evenly dispersed.
  4. Spread the batter out over the tray as evenly as possible. Bake for 10 minutes, then rotate 180°C and continue to bake for another 10 minutes. Be careful not to over bake.
  5. Cool in the tray completely, chill overnight and then cut into bars or squares to serve.
