You will need

  • 80g unsalted English butter, softened
  • 50g caster sugar
  • ½ teaspoon bicarbonate of soda
  • 60g golden syrup
  • 2 medium free range Woodland egg yolks
  • 250g plain flour
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 115g icing sugar, sifted
  • Red writing icing, to decorate

Step by step guide to making Spooky skeleton biscuits

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4. Line a baking tray with baking paper.
  2. In a bowl, beat together the butter and sugar until creamy, then stir in the bicarbonate of soda, golden syrup and egg yolks.
  3. Sift in the flour, ginger and cinnamon. Using your hands, bring the mixture together to form a ball.
  4. On a lightly floured surface, roll the dough out to a thickness of ½ cm. Use a 12cm gingerbread man cutter to stamp out 16 biscuits.
  5. Transfer the biscuits to the lined baking tray and bake in the preheated oven for 10-12 minutes, then cool on a wire rack.
  6. Mix the icing sugar with 1 tablespoon of hot water. Spoon into a piping bag and cut a small hole from the end, or use a small nozzle. Pipe onto the cooled biscuits to create skeletons.
  7. Break off a few limbs and heads and ice with the red icing so they look 'bitten' off. Leave to set and then serve.
