Chicken and spring vegetable casserole

You will need

  • Knob of unsalted butter
  • Drizzle of olive oil
  • 6 Sainsbury's skinless chicken thigh fillets, cut into pieces
  • 2 small leeks, washed, trimmed and sliced
  • 2 sprigs fresh thyme or 1 and ¼ teaspoon dried
  • 1 tablespoon Sainsbury's plain flour
  • 300ml Sainsbury's Signature chicken stock, hot
  • 100g sugar snaps or fresh peas
  • 100g asparagus tips, halved
  • 3 tablespoons Sainsbury's single cream
  • 1 heaped tablespoon fresh chopped tarragon or parsley (optional)

Step by step guide to making Chicken and spring vegetable casserole

  1. Heat the butter and a drizzle of olive oil in a deep, lidded frying pan or heavy-based pan over a high heat. Add the chicken pieces and stir-fry for 1-2 minutes.
  2. Add the leeks and thyme, stir for a further 1 min, then add the plain flour, stirring into the pan juices.
  3. Gradually add the hot stock, bring up to the boil, then simmer for 2 minutes.
  4. Throw in the vegetables and cook for a further 2 minutes before adding the cream and herbs, if using. Serve with mini jacket potatoes or quick-cook rice.

Cook's tip: Topping the cooled filling with some puff pastry and baking would quickly transform this into a great Sunday lunch.
