You will need

  • 1 tablespoon olive oil
  • 1 onion, peeled and finely chopped
  • 500g pack British turkey thigh mince
  • 1 lemon, zest only
  • 2 tablespoons fresh coriander, chopped
  • 4 tablespoons salsa
  • ½ orange pepper, deseeded and finely diced
  • 4 SO organic soft seeded wholemeal rolls, halved
  • 70g bag wild rocket
  • 4 tablespoons houmous

Step by step guide to making Deluxe turkey burgers

  1. You can cook these burgers in a frying pan or on a barbecue, if using the barbecue this needs to be preheated.
  2. Heat the oil in a frying pan over a medium heat and cook the onion for 5 minutes until soft. Set aside to cool.
  3. Put the mince in a bowl and season with freshly ground black pepper. Add the cooled onion, lemon zest and coriander and mix well. Shape into 4 patties (make sure you wash your hands thoroughly after handling raw meat).
  4. Cook the burgers, either on the preheated barbecue or in a frying pan, for 5-7 minutes on each side, or until cooked through and no pink remains.
  5. Meanwhile, mix together the salsa and pepper. Lightly barbecue (or grill) the cut side of the rolls.
  6. To serve, fill the rolls with a burger, a few rocket leaves, and a spoonful each of the pepper salsa and houmous.
