Easy turkey curry

Not too heavy or spicy, this sweet turkey, tomato and spinach curry is just right.

You will need

  • 1 tablespoon olive oil
  • 1 onion, peeled and finely chopped
  • 1 red pepper, sliced
  • 1 teaspoon medium curry powder
  • 2 tablespoons tomato purée
  • ½ x 500ml pouch Signature chicken stock
  • 1 tablespoon mango chutney
  • 390g carton chopped tomatoes in tomato juice
  • 500g pack diced British turkey breast
  • 250g basmati rice
  • 200g young leaf spinach, washed

Step by step guide to making Easy turkey curry

  1. Heat the oil in a pan and cook the onion and red pepper for 10 minutes, until softened. Stir in the curry powder and tomato purée and cook for a further 30 seconds.
  2. Add the stock, chutney and tomatoes. Simmer for 10 minutes over a medium heat. Add the turkey, and cook for a further 5-10 minutes till cooked through.
  3. Meanwhile, place the rice in a pan and pour over 500ml of cold water. Bring to the boil then reduce the heat, cover the pan, and simmer for 12 minutes, until tender. Drain.
  4. Just before serving, stir the spinach though the turkey mixture and season with freshly ground black pepper. Serve with the rice, and poppadoms if you like.

Cook's tip: You can also try making this delicious curry with firm white fish fillets or lean chicken breast chunks.
