Marinated mushroom kebabs

A simple balsamic and garlic marinade adds great flavour to these chicken and mushroom skewers.

You will need

  • 75ml olive oil
  • 45ml balsamic vinegar
  • 3 garlic cloves, peeled and finely chopped
  • 2 tablespoons fresh parsley, chopped (optional)
  • Salt and freshly ground black pepper, to taste
  • 450g closed cup mushrooms, trimmed and wiped
  • 500g chicken breasts, diced
  • 3 mixed peppers, cut into large cubes

Step by step guide to making Marinated mushroom kebabs

  1. Mix the olive oil, balsamic vinegar, garlic, parsley (if using) and seasoning together in a large bowl.
  2. Add the mushrooms, chicken and peppers and stir until the meat and veg are well coated. Cover the bowl and leave to marinate for at least 30 minues, stirring occasionally.
  3. Preheat the barbecue or grill.
  4. Thread onto 8 skewers, alternating the mushrooms, chickens and peppers. Cook on a sheet of foil on a medium-hot barbecue (or under the grill) for about 6-7 minutes on each side.
