You will need

  • 1.15kg (approx.) pack basics chicken drumsticks
  • 1 garlic clove, crushed
  • 1 tablespoon vegetable oil
  • 1 teaspoon mixed dried herbs
  • 800g potatoes, scrubbed and sliced
  • 500g (from a 750g pack) frozen sliced mixed peppers by Sainsbury's
  • 45g Sainsbury's pitted black olives, drained

Step by step guide to making Mediterranean chicken bake

  1. Preheat the oven to 200ºC, fan 180ºC, gas mark 6. Place the chicken in a large roasting tin and scatter over the crushed garlic. Drizzle with half the oil, scatter over the mixed herbs and toss it all together.
  2. Place the sliced potatoes in another large roasting tin, drizzle with the remaining oil, season with freshly ground black pepper and toss to coat.
  3. Place the two roasting tins in the oven with the chicken above the potatoes and roast for 30 minutes, turning halfway through cooking.
  4. Meanwhile, in a large frying pan over a medium-high heat, stir-fry the peppers for 5 minutes, then drain off any excess water.
  5. Tip the fried peppers into the tray of potatoes, and add the olives. Transfer the chicken into the potato tin as well and toss everything together.
  6. Return to the oven for a further 15 minutes, until the chicken is golden and cooked through. Transfer to a warmed serving dish and take to the table.

Make it veggie: Replace the chicken drumsticks with 275g chopped courgettes. Roast them in the oven, in a separate tin, for 25 minutes, before stirring in the peppers, potatoes and olives and cooking for the remaining time.
