You will need
- 1 x 1.35kg whole chicken
- 1 tablespoon olive oil
- 1.2kg potatoes, roughly chopped and par-boiled
- 250g carrots, peeled and sliced
- 100g frozen British garden peas
- 500g frozen broccoli florets
- 1 tablespoon plain flour
- 1 chicken stock cube, made up to 500ml with hot water

Step by step guide to making Roast chicken
- Preheat the oven to 190°C, fan 170°C, gas mark 5.
- Place the chicken in a large roasting tin and brush with the oil. Cook for 30 minutes, then add the potatoes to the roasting tin. Cook for a further 50 minutes, until the chicken is cooked through and the potatoes are golden and crisp. Transfer the chicken and potatoes to a serving dish and keep warm.
- While the chicken is resting, cook the vegetables and make the gravy. Cook the carrots in a large pan of boiling water for about 8 minutes, until almost tender, adding the peas and broccoli for the final 3–4 minutes.
- To make the gravy, pour off all but 2 tablespoons of the chicken juices from the roasting pan. Stir the flour into the remaining chicken juices and cook on the hob for 1 minute.
- Remove from the heat and gradually add the stock. Return to the heat and bring to the boil, stirring to mix in all the flavour from the bottom of the tin. Pour the gravy into a jug to serve - you could sieve it first if you would prefer a smooth gravy.
- Serve the chicken with the roast potatoes, vegetables and gravy.
Cook's tip: To test if the chicken is cooked all the way through, pierce the bird in a few of the thicker sections to see if the juices that are released are clear. If they are still pink at all, return the chicken to the oven, if they are clear, then the chicken should be cooked.
