Sesame chicken and pepper stir-fry

You will need

  • 2 tablespoons cornflour
  • 300ml chicken stock
  • 2 tablespoons Sainsbury's light soy sauce
  • 1 tablespoon Sainsbury's olive oil
  • 400g pack fresh chicken mini fillets by Sainsbury's, cut into bite-size pieces
  • 2 garlic cloves, peeled and finely sliced
  • 1 bunch spring onions, finely sliced
  • 3 peppers, preferably different colours, deseeded and cut into strips
  • 1 tablespoon Sainsbury's toasted sesame oil
  • 1½ tablespoons sesame seeds, toasted
  • 2 x 250g packs microwaveable basmati rice by Sainsbury's

Step by step guide to making Sesame chicken and pepper stir-fry

  1. Place the cornflour in a bowl and whisk in the stock and soy sauce to a smooth consistency. Set aside.
  2. In a large wok or frying pan, heat the olive oil and fry the chicken, garlic and half of the spring onions until the chicken is just cooked through.
  3. Add the peppers and cook for a further 5 minutes, stirring, and then add the cornflour sauce.
  4. Cook for a further 5 minutes until the sauce has thickened slightly, then stir in the remaining spring onions, along with the sesame oil and sesame seeds.
  5. Meanwhile, microwave the rice according to pack directions, divide into bowls and serve with the chicken stir-fry.

Cook's tip: Always remember it is important to wash hands thoroughly after handling raw meat.
