You will need

  • 1 tablespoon olive oil by Sainsbury's
  • 400g pack British chicken mini fillets by Sainsbury's
  • 2 tablespoons Mexican spice blend by Sainsbury's
  • 1 red onion, peeled and sliced
  • 1 red pepper, deseeded and sliced
  • ½ green pepper, deseeded and sliced
  • ½ yellow pepper, deseeded and sliced
  • 300g Sainsbury's Italian passata sauce
  • 410g tin Sainsbury's mixed pulses in water, drained and rinsed in cold water
  • 31g pack fresh coriander, washed and chopped, reserving a few leaves to garnish
  • 4 plain tortilla wraps by Sainsbury's
  • 4 tablespoons be good to yourself soured cream
  • 50g mature British Cheddar cheese by Sainsbury's, grated
  • 135g pack Sainsbury's crispy leaf salad, to serve

Step by step guide to making Speedy chicken fajitas

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Heat half the oil in a frying pan and cook the chicken for 5 minutes, until golden. Stir in the spice blend and cook for 1 minute. Remove from the pan and set aside.
  2. Wrap the tortillas in foil and warm in the oven for 8 minutes.
  3. Meanwhile, heat the remaining oil in the pan and cook the onion and peppers for 5 minutes, then stir in the passata.
  4. Return the chicken to the pan along with the mixed pulses. Cook, stirring, for a further 2-3 minutes, until the chicken is cooked through and no pink remains. Stir in the chopped coriander.
  5. Serve the tortillas topped with the chicken mixture, some soured cream and grated Cheddar, or serve in separate bowls for filling and sharing at the table.
  6. Garnish with the reserved coriander, and serve with the salad.
