You will need

  • 1 tablespoon vegetable oil
  • 1 red onion, peeled and sliced
  • 1 red pepper, deseeded and sliced
  • 350g thick-sliced cooked turkey, cut into bite-sized pieces
  • 1 small courgette, sliced
  • 1 tablespoon Sainsbury's Goan masala paste
  • 1 x 400ml tin coconut milk
  • 1½ tablespoons mango chutney
  • 1 x 100g bag Sainsbury's baby leaf spinach
  • ½ lime, juice only
  • Steamed basmati rice, to serve

Step by step guide to making Turkey curry

  1. Heat the oil in a large, deep frying pan. Add the onion and pepper and stir-fry for 3 minutes.
  2. Add the turkey, courgette, masala paste, coconut milk and chutney, and gently simmer for 5 minutes. Stir through the spinach until wilted.
  3. Squeeze in the lime juice and season with salt and freshly ground black pepper. Serve with steamed rice.
