Turkey tortilla stack

Instead of making individual tortilla wraps, stack then up and cut into wedges for a fun change.

You will need

  • 1 tablespoon sunflower oil by Sainsbury's
  • 1 onion, peeled and chopped
  • 1 red pepper, deseeded and chopped
  • 500g pack British lean turkey thigh mince
  • 390g carton Italian chopped tomatoes in tomato juice
  • 420g can red kidney beans in chilli sauce
  • ½ x 28g pack fresh flat leaf parsley, chopped
  • 3 plain tortilla wraps by Sainsbury's
  • 50g British mature Cheddar by Sainsbury's, grated
  • 250g bag sweet leaf salad by Sainsbury's

Step by step guide to making Turkey tortilla stack

  1. Heat the oil in a pan then add the onion, red pepper and turkey mince.
  2. Fry over a high heat for 5 minutes, stirring to break up the mince with a wooden spoon, until the onion and pepper are softened and the mince is browned.
  3. Add the tomatoes and kidney beans to the pan. Bring to the boil, then reduce the heat and simmer for 10 minutes, stirring occasionally until thickened slightly.
  4. Remove from the heat and stir through the parsley.
  5. To assemble the stack, place one tortilla wrap on a board or plate. Spoon a third of the chilli mixture over the wrap, spreading it evenly.
  6. Place another wrap on the top and spread with another third of the chilli mixture.
  7. Repeat, finishing with the third wrap and remaining chilli mixture on top.
  8. Sprinkle over the Cheddar, cut into 4 wedges and serve with the sweet leaf salad.
