Coconut ice

This retro sweet is easy and fun for kids to make. Ideal as a tasty edible gift.

You will need

  • Unsalted butter, for greasing
  • 397g tin condensed milk
  • 300g desiccated coconut
  • 300g icing sugar
  • 1 capful vanilla extract
  • Few drops of red or pink food colouring

Step by step guide to making Coconut ice

  1. Grease and line a 20cm square cake tin with baking paper.
  2. Pour the condensed milk into a bowl. Add the coconut, icing sugar and vanilla. Mix until combined. Spoon half of the mixture into the tin and press down firmly using your hands.
  3. Add a few drops of the food colouring to the remaining mixture. Mix until you have an even colour. Spoon the coloured mixture over the top of the white layer, press down with your hands and smooth with a spatula.
  4. Cover, put in a cool place and leave to set for at least 4 hours, or overnight. Cut into small squares and keep in an airtight tin.

Cook's tip: For a great homemade gift, wrap the coconut ice in cellophane bags, tie with ribbons, and a add a gift tag.
