Oven-roasted fish platter

This speedy platter of piri piri prawns, crumbed cod and Parma ham scallops is perfect for sharing.

You will need

  • For the piri piri prawns:
  • 2 lemons, juice of 1 for the prawns and 1 cut into wedges to serve
  • 1 tablespoon hot piri piri seasoning
  • 1 tablespoon olive oil
  • 2 x 180g packs raw king prawns
  • Handful washed rocket leaves, to serve
  • For the crumbed cod bites:
  • 60g panko breadcrumbs
  • 2½ tablespoons British plain flour
  • 2 medium British free range Woodland eggs, beaten
  • 260g cod fillets, cut into chunks
  • For the wrapped scallops:
  • 70g pack Taste the Difference 24 month matured Parma ham, slices halved lengthways
  • 180g pack scallops
  • 210g handcrafted garlic and parsley flatbread, to serve
  • ½ x 230g jar Taste the Difference garlic mayonnaise, to serve

Recipe Information

Step by step guide to making Oven-roasted fish platter

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. For the prawns, whisk the lemon juice, piri piri seasoning and oil in a bowl. Add the prawns and coat well. Cover and chill.
  2. For the cod bites, put the breadcrumbs on a baking tray; bake for 3-5 minutes until golden.
  3. Meanwhile, for the scallops, wrap each one in ham, then season and set aside.
  4. Put the flour, egg and baked breadcrumbs onto separate plates. Dip the cod in the flour, the egg and then the breadcrumbs.
  5. Put the scallops, cod bites and flatbread on a baking tray and cook for 10 minutes. Add the prawns for the final 6 minutes.
  6. Serve with rocket, mayonnaise and lemon wedges.

Cook's tip: Remember to wash your hands after handling the raw fish.
