Peppermint creams
These sugary mint sweets are easy to make at home and make great edible Christmas gifts.

You will need
- 500g royal icing sugar, plus a little extra for dusting
- Few drops of peppermint flavouring
- Few drops of red food colouring
- Coloured sugar balls and edible Christmas decorations

Step by step guide to making Peppermint creams
- Line a baking tray with baking paper.
- Tip the icing sugar into a large bowl. Measure out 4 tablespoons of cold water and add it to the mixing bowl along with a few drops of the peppermint flavouring.
- Mix together with a wooden spoon, and then with your hands, until you’re left with a firm, smooth mixture. Break the mixture in half.
- Add a little red food colouring to one piece and leave the other one white (or you might like to make a different colour, such as green). Dust a little icing sugar over your work surface, then knead each, until the colour is even.
- Sprinkle some more icing sugar over a rolling pin then roll each piece out until they are a little thicker than a pound coin.
- Cut out as many shapes as you can using small Christmas-themed biscuit cutters. Lift the shapes off the work surface using a spatula or palette knife, and move them to the baking sheet.
- Decorate with icing and sweets as you like. Leave to dry for at least 4 hours, or overnight.
Cook's tip: Decorate plain gift boxes with glitter and sparkly stickers then line with tissue paper, ready for the sweets.
