Spiced pear bread and butter pudding
A fruity twist on this traditional pud - sweet pears sandwiched between bread and creamy custard.

You will need
- 60g unsalted butter
- 6-8 slices white bread, crusts removed
- 4 tablespoons mincemeat (check label for vegetarian suitability)
- 4 ripe red pears, cored and thickly sliced
- 25g caster sugar
- 300ml milk
- 284ml double cream
- 3 medium eggs, beaten
- 1 tablespoon demerara sugar

Step by step guide to making Spiced pear bread and butter pudding
- Butter the bread on one side, then spread over the mincemeat. Cut each piece into 4 triangles.
- Arrange the bread in a 2-litre ovenproof dish, tucking in the pear slices as you go to create layers, until all the bread and pears are used up.
- Beat together the caster sugar, milk, double cream and the eggs. Strain this custard mixture through a fine sieve to remove any lumps, then pour over the bread and pears.
- Sprinkle over the demerara sugar and allow to stand for 20 minutes, to allow the bread to soak up some of the custard. Preheat the oven to 180°C, fan 160°C, gas mark 4.
- Bake for 30-35 minutes or until the custard is just set.
- Allow to stand for a further 15 minutes, then serve with a drizzle of fresh cream or warm custard.
