You will need

  • 1 medium free range Woodland egg yolk by Sainsbury's
  • 35g caster sugar
  • 80g Sainsbury's Italian mascarpone
  • 1 vanilla pod, halved and seeds reserved
  • 125ml Sainsbury's British double cream
  • 100ml strong coffee, made using Sainsbury's Gold Roast instant coffee
  • 2 tablespoons Sainsbury's Irish country cream
  • 100g Sainsbury's sponge fingers
  • 20g smooth dark chocolate, by Sainsbury's, finely grated

Step by step guide to making Individual tiramisu

  1. In a medium bowl, whisk together the egg yolk and sugar until pale and fluffy. Add the mascarpone, vanilla pod seeds and double cream and whisk until the mixture is soft and thick.
  2. Place the sponge biscuits in a shallow dish and pour over the coffee and Irish cream. Turn the biscuits over a few times to make sure they are soak up some of the liquid, then divide half of the biscuits between 4 individual glasses.
  3. Spoon half of the mascarpone mixture over the biscuits and scatter with half of the grated chocolate. Repeat with the remaining biscuits, mascarpone mixture and finish with the remaining chocolate. Serve straight away, or cover and chill until needed.

Cook's tip: Depending on the size of your serving glasses, you may need to break up the biscuits slightly to fit.
