Recipe Information
Step by step guide to making Profiterole tower
- Defrost the profiteroles and chocolate sauce according to the pack instructions.
- To make the caramel sauce, put the sugar and 3 tablespoons of cold water in a shallow metal pan over a low heat. Melt gently while stirring, to dissolve the sugar. Increase the temperature and simmer, without stirring, until golden. Cool slightly.
- Carefully dip part of each profiterole in the caramel and stick together to make the first layer on a round serving platter using 15 profiteroles.
- Dip some strawberries and blueberries in the caramel and place around the outside edge.
- Build the layers upwards in this fashion, making the circles smaller to reach a point, using all the remaining profiteroles and berries. You should aim for at least 4 layers with a single profiterole sitting on top.
- Melt the white chocolate in a bowl set over a pan of gently simmering water. Drizzle the remaining caramel and the melted chocolate over the profiteroles and decorate with shavings of the extra white chocolate.
- Serve with the chocolate sauce from the profiterole pack on the side.
Cook's tip: Take care when working with the caramel as it will be very hot.
