  • 4 medium British free range Woodland eggs
  • 6 tablespoons semi skimmed milk
  • 60g British medium Cheddar, finely grated
  • 2 tablespoons chives, washed and finely chopped
  • 4 thick slices white bread
  • Knob of unsalted English butter
  • Handful of cherry tomatoes, to serve

Step by step guide to making Cheesy chive eggy toasts

  1. Beat the eggs in a medium bowl. Whisk in the milk, Cheddar and chopped chives.
  2. Cut the bread into triangles and lay out in a large dish. Pour over the eggy mixture and turn the bread to cover completely.
  3. Melt the butter in a small frying pan over a medium-low heat.
  4. Add the eggy bread slices to the pan and cook for 2-3 minutes on each side, ensuring they are cooked through and golden.
  5. Serve with the cherry tomatoes on the side.
