Crunchy coley fish fingers
Homemade fish fingers can't be beaten; these have extra crunch from panko crumbs and cornflakes.

You will need
- 750g King Edward or Maris Piper potatoes, peeled and cut into chunks
- 2 tablespoons British plain flour by Sainsbury's
- 1 medium British free range Woodland egg
- 50g panko breadcrumbs by Sainsbury's
- 30g cornflakes by Sainsbury's
- 400g fresh coley fillets, skinned and cut into 2cm-wide slices
- 1 tablespoon sunflower oil by Sainsbury's
- 200g frozen British garden peas by Sainsbury's
- 3 tablespoons 50% less fat crème fraîche by Sainsbury's
- 4 tablespoons tomato ketchup by Sainsbury's, to serve

Step by step guide to making Crunchy coley fish fingers
- Preheat the oven to 190°C, fan 170°C, gas mark 5. Bring a pan of water to the boil, add the potatoes and cook for 15 minutes, until tender.
- Meanwhile, put the flour on a plate, beat the egg in a shallow bowl and crush the breadcrumbs and cornflakes together with your hands on a separate plate.
- Dip the coley strips into the flour, shake off the excess then dip into the egg and finally into the breadcrumb and cornflake mixture. Turn until evenly coated then place on a baking tray.
- Drizzle with the oil and bake in the oven for 15 minutes, until the coating is golden and crisp and the fish is opaque and cooked through.
- Just before the end of the fish cooking time, cook the peas in a pan of boiling water for 3 minutes.
- When the potatoes are cooked, drain and return to the pan. Mash with the crème fraîche, until soft and creamy, and season with freshly ground black pepper.
- Drain the peas and mash with a potato masher or with a stick blender, until crushed.
- Serve the coley fingers with the mash and crushed peas and with some ketchup or lemon wedges on the side.
