Ginger and lime barbecued mackerel

Whole fish are so easy to cook on the barbecue, and this zingy mackerel is a source of omega 3.

You will need

  • 4 small whole mackerel, from the fish counter
  • 2 tablespoons olive oil by Sainsbury's
  • 2.5cm piece fresh ginger, peeled and chopped
  • 1 garlic clove, peeled and finely chopped
  • 1 teaspoon Sainsbury's light soy sauce
  • 3 tablespoons fresh flat leaf parsley, washed and finely chopped
  • 1 tablespoon runny honey by Sainsbury's
  • 3 limes, zest and juice of 2, plus extra wedges to serve
  • ½ cucumber, washed and cut into thin ribbons with a vegetable peeler
  • 1 tablespoon fresh British dill, washed and chopped
  • 1 tablespoon rice vinegar
  • Paprika, to serve

Step by step guide to making Ginger and lime barbecued mackerel

  1. With a sharp knife, cut 6 deep slits into one side of each of the mackerel. Put in a shallow, non-metallic dish and brush all over with the oil.
  2. Mix together the ginger, garlic, soy, parsley, honey and the lime juice and zest. Spread over the mackerel, cover and leave to marinate in the fridge for 20 minutes.
  3. Meanwhile, combine the cucumber, dill and vinegar for a refreshing salad.
  4. Cook the mackerel on the barbecue, or in a preheated griddle pan, for 5 minutes on each side until cooked (the fish should flake easily and appear opaque).
  5. Sprinkle with paprika to finish, and serve with the salad and lime wedges.
